Visit just before Christmas - the town is sprinkled liberally with tiny sparkly fairy lights and friendly handicraft stalls.
Enjoy some ice-skating on the main square followed by a rich Belgian hot chocolate to warm you and soothe any bruised knees/egos if you fell over.
One of the most romantic cities in Europe, Bruges a great place to take a date. It's a little off the beaten path so you don't get crowded with tourists, and it is a very walkable city.
Spending an afternoon drinking fantastic beer (second only to the Germans) outside at any one of the bars on the plaza is a perfect way to get to know someone. Tip is to just pack a change of clothes and your debit card.
Bruges is a place to wander and to eat: a nice blend of a sweet fairytale city and a genuine and fascinating medieval UNESCO site.
There's actually a lake right in the center called "Minnewater" meaning Lake of Love in old Flemish. Loads of intimate little bistros and top-end restaurants.
