Cappadocia is a magically weird place. Ancient lava flows combined with strong winds created tall stone pillars strewn around a pretty spectacular landscape. The locals hollowed out the pillars (fairy chimneys) and moved in. Now they've built modern homes for themselves and tourists swarm to stay in the caves in Goreme (for younger backpackers typically) and Urdup (think more money).
Goreme is a pretty small and sleepy town with some interesting walks, and a lot of people who are starting to wake up to the money potential in tourism.
More hassley than Istanbul, but still pretty lovely. Worth staying for a couple of nights if you are in Turkey for a week. And if you have the money - catch a hot air balloon to admire the scenery!
