A canal tour is perhaps a bit touristy, but I enjoy them despite living in the Netherlands. A one-hour trip is a nice way to see a few sights when you are tired of walking.
In the summer I prefer to rent a paddleboat with a friend. There is a rental place near Rijksmuseum. It is not as warm on the canals and you can go at your own pace.
If you are curious about just how far below sea level the Netherlands is, and have heard rumours about the airport being one of the lowest points, you might take a moment to stop by the Waterloo metro station.
On the wall is a depiction of various points relative to sea level, and as you ascend the stairs you can see tubes containing water for a more visual demonstration of just how far below the sea you are.

Bakken met Passie is located near the Albert Cuyp market and offers delicious baked goods. On Saturdays, a number of treats are available, such as French brioche and carrot cake. The breads they offer are a real change from the standard Dutch variety, and you can really believe that they are 'baked with passion.'

Despite the name, Koffiehuis van den Volksbond is a restaurant. It is located away from the main tourist areas and remains a favorite with locals for its tasty food, good prices, and interesting atmosphere.
The restaurant has a small menu, which changes weekly; usually there is at least one each of chicken, fish, meat and vegetarian dishes. Because it is a small place, don't expect your own table - you may be seated with strangers, but this usually makes for interesting dinner conversation. The high ceilings make it one of the better places for people who aren't fond of the smoke typically found in Dutch restaurants.

The Amsterdam film museum shows classic movies, including a number in English. It is located in Vondelpark, and on a summer evening there are few more pleasant things to do in Amsterdam than take in a black and white movie on the big screen, then sit outside in the cafe in the park, under the lanterns hanging from the trees, and discuss the movie with a friend over a drink.
