These guys offer mountain biking trips around the Bend area, from 1/2 day to three. They can arrange bike hire, transport you to the start of the trail, feed you and escort you back to base, and will tailor it to your skills and interests.
Once back at the office, they even offer you a bottle or two of Deschutes beer!
I had a great time on a one day Bachelor to Bend trip and, if it wasn't for the substantial distance from home, I'd be back there tomorrow.

Super-friendly bed and breakfast place and very reasonably-priced.
Coffee and some sort of cake seem to be permanently available. The breakfasts are as huge and filling as you want them to be.
The centre of Bend, with it's pubs and restaurants, is just 10 minutes walk away, so it's perfectly located for the town as well as the surrounding Cascade mountains.
You will have to share a bathroom though, so if you're not happy about that, look elsewhere, but everything's spotlessly clean.

You've obviously tried a pint or two of Harveys while in town (you have, haven't you?) Pop in to the Brewery shop and you can take some home. Bottles of more ales than you'll have seen in the pubs, plus draught, from 2.4 litres (4 1/2 pints or so) to 20. The smallest containers will cost you less than a tenner.
There's also a small wine selection and the staff are knowledgable and friendly.

There are many day-trips to the volcano. Most will collect you from the quayside for a run to the crater and straight back again.
If you want to see the quiet villages of Nikia or Emborio on the crater rim as well (and the view from Nikia in particular is terrific), you may need to make a few enquiries - there are a few guides who go a bit further, but not many!
Alternatively, there is a limited bus service into the interior.
Although it sits dauntingly high above the little town, the ruined castle is a straightforward, rocky, if tiring, 30-minute walk from the centre.
The path is fairly simple to follow - if in doubt, look for the ankle-level lights that mark the way. At the summit, you can scramble around the ruins and take in the view of Tilos's central plain and surrounding mountains, as well as the beaches at Plaka and Agios Antonios.
Arriving from Livadia, you may see a sign directing you. Failing that, just walk back along the road from the central bus stop.
A cobbled path uphill from the port town to the hilltop Monastery, via the Convent of the Apocalypse. Shaded in parts, it's not too taxing, although best avoided in the midday heat.
The higher you go, the better the views get - you can easily make out nearby islands, approaching cruise ships and abandoned windmills.
About a kilometre out of Skala, along the Chora road (it's signposted)
Quiet bar (well, it was when I was there) about 10 minutes walk southeast of the centre. The food menu is not extensive, but does the job. The beer menu definitely is extensive, and runs to 150 or more, listed by category and alphabetically to make it all nice and simple.
