There is a gorgeous self-catering property in the middle of a forest just twenty minutes from Mullingar. It's called The Stables and has eight rooms. It's a converted stables with a very modern half-glass box living area jutting out into the courtyard. Really, really special. Wake up and see reindeer wandering by the windows. We went there for a 40th this year - amazing. There were 25 of us including kids. It's been in Grand Designs for architecture.
